Five Essential Summer Salads
These essential summer salads are wonderful and refreshing additions to any meal during the warm summer months. With little or no cooking involved, they are simple to assemble and are finished with light and flavorful vinaigrettes. Hearty grains, colorful vegetables, or a light protein can be mixed in to provide a healthy and wholesome dish.
I have compiled five favorite summer salad recipes that have appeared on the blog this past year and are very popular among readers: a Greek Salad with a delicious Feta cheese dressing which can also be used a dip; a Mediterranean Quinoa Salad with a high nutritional value and ingredients that are easy to substitute for others; a refreshing Rice and Vegetable Salad with no mayo in the list of ingredients; a Tuna Salad that is loaded with crunchy, chopped vegetables and bright lemon flavors; and, an Italian Panzanella Salad which pairs perfectly with any simple grilled meat. This is my last post before I leave for Greece early next week. I look forward to my annual pilgrimage to the country of my birth, as I know I will come back with new recipe ideas and renewed appreciation for simple, homemade, family meals prepared with care and thought.
