These six, must-try, healthy Mediterranean soups are a roundup of popular soup recipes on this blog! Although bean and grain soups are often associated with the cold months, these recipes are on regular rotation at my house all year ’round. Soups are the ultimate one-pot dish and it would be a shame to limit them only to a certain season.
Five of these soups are meatless for those who prefer a vegetarian meal. With beans or legumes being the star ingredients, however, they more than compensate for the lack of meat with their own protein-packed and nutrient-rich profiles. Lots of vegetables add even more flavor, interest, and overall goodness to these simple and delicious soups.
All of these must-try healthy Mediterranean soups re-heat pretty well and this means they can be enjoyed more than once in a week. Of course, they can also come to work with you for lunch the next day in a Thermos. To get ahead of the weeknight meal schedule, we can also get a big pot of soup started on a quiet Sunday afternoon so that we can reap the benefits of a ready meal in the fridge on one of those extra busy school nights. Either way, a big bowl of good-for-you-soup is an all-around winner!

If you click on each recipe title, the link will take you to the recipe post. From there, click on the print icon so you can print the recipes. I hope this helps!
