Did you know that the leek, this humble but delicious vegetable, has its own dedicated day every year? This day is the first day of March, or Saint David’s Day, commemorating the patron saint of Wales. Leeks are a national symbol of Wales and the personal symbol of Saint David. As such, they are celebrated and eaten in various delicious dishes in his honor. So, every year on March first, in honor of my husband’s name day, I always make it a point to cook dishes that highlight leeks, one of my absolutely favorite vegetables.
From soups, to fillings for crispy filo appetizers, to hearty quiches, galettes and frittatas, leeks add a sweet, caramelized note to every dish. They can be used in recipes instead of onions, they can be paired well with fresh herbs, sharp and mild cheeses. Leeks can be prepped ahead of time, they can even be sliced and frozen until they are needed. I can hardly think of a winter vegetable as versatile as the leek!
