Now that most of us here in the United States, and many of our friends abroad, are in some form of lockdown, we are slowly starting to come to grips with the new restrictions that are in effect where we live. After the initial shock and disbelief of being ordered to remain at home, we are now gradually coming to terms with our “new normal” and trying to make the best of this situation.
Establishing some kind of routine and structure in our lives is very important, as is a conscious effort to stay healthy and well. Cooking wholesome, nutritious meals is one of the best ways to do just that and it is an easily achievable goal. That said, what can we cook using pantry staples during this coronavirus lockdown?
The answer to this question is simple: there are a lot of things we can prepare using items that many of us already have at hand in our pantries! This is the perfect time to experiment with new recipes. Be adventurous while trying new cooking techniques! Include more vegetables and pulses in our diets! Finally, keep an open mind as we substitute recipe ingredients for what we have available in our pantries.

Everything looks so good. The spoon in the bowl of creamy leek and potato soup is the same as was given to me by my mother — First Love, I think it is called. It makes it even more special! Those chicken cutlets and Greek meatballs will be on my menu this week with thoughts of you.
