Hello friends! I hope your summer is going as well as it possibly can, under these strange and unusual circumstances. Although I was not able to go to Greece this summer with my family, I did manage to take a small break in New England for a week, which was a well-needed change of scenery. I hope to be able to share some photos in one of my upcoming posts.
I am back at home now, enjoying the cooler days of late summer, harvesting a modest crop of vegetables from my humble and mostly neglected garden, and continuing with new recipe testing. I have also been updating favorite older blog posts with new photographs and content.
In today’s post, I am sharing with you How to make a souvlaki platter. This is something I have made several times this summer with different variations each time. It is easy to put together, and always a big hit!
The components of a souvlaki platter
- Juicy Chicken Skewers
- Homemade Pita Bread
- Creamy Tzatziki
- Fresh Tomatoes & Cucumber
- Crispy, Homemade French Fries
- Optional: Sliced red onion, fresh parsley
Chicken Souvlaki
This particular platter uses chicken, but you can also use pork, lamb, or beef. The secret to a flavorful and juicy grilled chicken souvlaki is all in the marinade (and this marinade works equally well with chicken, lamb, or pork). I often prepare the chicken in the marinade the night before, but even a few hours basting will be enough if you first cut the chicken into cubes. For best results, I use chicken thighs which do not dry as easily as chicken breasts, but the latter will be fine too–just don’t overcook them!
Here are the two versions (and two different marinades), I use all the time:
Homemade Pita Bread
The dough for these Greek pita breads is very easy to put together and the pita cook easily on the grill or in a skillet. Yes, you can always use store bought pita, but, if you have the time, it is worth trying the homemade version!
Creamy Tzatziki
Tzatziki is the quintessential yogurt-based Greek spread. In my house, we use it all the time – not only as a spread, but also as a condiment. If you have some good Greek-style yogurt, a small cucumber and some garlic, you can make it in minutes! This is something I would recommend not ever buying at the store.
Fresh Tomatoes & Cucumbers
In a small bowl toss some ripe, juicy tomatoes with chunks of cucumber, sweet peppers, a little Feta cheese, extra virgin olive oil and Greek oregano.
Assembling the souvlaki platter
Once the chicken souvlaki is ready, place the grilled meat on a big platter and arrange everything around it: the pita cut into wedges, the tzatziki and the tomatoes in small bowls, fries in another bowl and scatter the sliced red onions with the fresh parsley leaves around them. Sprinkle with some sea salt flakes everything and bring to the table. Enjoy a traditional Greek summer meal!

My favorite salad!! Tomatoes,cucumbers,and Feta! I don’t see a recipe for your homemade French fries- mine never turn out “crispy” enough- do you have a “secret”???
