This delicious green drink is packed with good-for-you, non-starchy vegetables and large doses of protein (from the Greek yogurt) which are sure to rev up your metabolism. The fresher the ingredients, the better it is, so pick them up at your local farmer’s market today and head home to make this simple and versatile drink that is so refreshing, filling and satisfying. Depending on what you have on hand, you can easily substitute with similar greens and fruits, while trying to keep the proportions more or less the same.
Super Green Smoothie
- 1/2 cup water, ice cold
- 1 cup baby spinach (washed)
- 1/2 cup English cucumber, roughly diced (with the peel)
- 1 sm. celery stalk, sliced
- 1/2 med. banana, sliced
- 1/2 cup pineapple chunks (frozen are fine)
- 6 oz. plain Greek yogurt (or plain Kefir)
- 4 ice cubes
Combine all ingredients in a blender in the order listed and blend on high speed for a minute or so. Once everything is fully incorporated and non-chunky, your drink is ready.
Optional mix-ins that won’t much change the flavor of your smoothie are ground flax seeds, a handful of mint leaves, a small piece of peeled ginger, and/or a scoop of vegan vanilla protein powder.
Pour in a chilled tall glass, add a fun straw, sit back and enjoy!
