These delicious Artichoke and Graviera Filo Puffs are the perfect, bite-sized appetizers for all your Holiday entertaining needs! With just a handful of ingredients from your pantry, some artichoke hearts, a chunk of Greek Graviera cheese and a box of filo pastry shells, you can assemble a flavorful and fuss-free appetizer in minutes!
In this simple recipe, caramelized onions, cream, artichoke hearts, and nutty Graviera cheese make the perfect make-ahead filling for these mini filo shells. Once the filling is ready, the mini shells can be assembled while the oven heats up. In less than 20 minutes, this crowd-pleasing appetizer is ready to enjoy!
Ingredients for the Artichoke and Graviera Filo Puffs
- Fillo shells: good quality filo pastry – I used the Fillo Factory organic mini fillo shells
- Extra virgin olive oil: to sauté the onions & garlic (butter can also be used)
- Onions and Garlic: green onions (or, shallots), plus a medium garlic clove
- Seasoning: just sea salt and freshly ground pepper
- Flour: all-purpose flour to help thicken the filling
- Half and Half: light or heavy cream can also be used
- Artichoke Hearts: plain (not marinated), drained and chopped
- Cheese: Greek Graviera Cheese (or Gruyère cheese)
- Optional Additions: lemon zest, fresh basil or fresh chives
How to make the Artichoke and Graviera Filo Puffs
- Remove the filo cups from the freezer and allow them to come to room temperature

- Place a small amount of the artichoke – cheese mixture at the bottom of each filo shell and top with more cheese

- Put the filled filo shells in mini muffin tins or a small baking sheet

- Bake for about 18 minutes, or, until golden brown

Enjoy warm or at room temperature, by itself, or as part of a holiday buffet spread!
How to make them ahead of time
You can prepare these delicious filo puffs several hours ahead of time:
- Place the filo shells on a small baking sheet, cover well and set aside.
- Prepare the filling and refrigerate.
- When you are ready, fill the filo shells with the filling, top with some more cheese and bake until golden brown.

This recipe is my latest collaboration with Fillo Factory. You can find Fillo Factory filo shells at Whole Foods and several small local stores. I love the quality of the Fillo Factory products and I always make sure to stash a couple of boxes in the freezer!
- 2 boxes of mini filo shells (24 in total)
- 2 TBSPS. extra virgin olive oil
- 2-3 green onions (or 2 small shallots), chopped
- 1 medium garlic glove, minced
- ¼ tsp. sea salt and freshly ground pepper, to taste
- 1 TBSP. All-Purpose flour
- ½ cup half and half (or heavy cream)
- 8-oz. drained artichoke hearts, chopped or quartered, depending on the size of the hearts
- 1 cup Greek Graviera cheese (or, Gruyère), shredded
- 1 tsp. lemon zest (optional)
- 2 tsp. fresh basil or fresh chives, minced (optional)
- Remove the filo cups from the freezer and bring to room temperature. Preheat the oven to 375ºF.
- Prep the green onions and the garlic and set aside. Grate the cheese and drain the can of artichokes.
- In a medium skillet, set over medium heat, sauté the onions and the garlic for a couple of minutes. Season with salt and pepper and cook for about 2-3 minutes until they soften. Stir in the flour and cook for a couple of minutes, stirring often so it does not burn (this will help thicken the filling).
- To the skillet, add the half and half (or cream) and, once it is well incorporated and slightly thickened, fold in the chopped artichoke hearts. Sprinkle ⅔ of the Graviera cheese over the mixture and when it melts remove the skillet from the heat. Add the lemon zest and fresh herbs, if using.
- Spoon the mixture to the mini filo shells and top with the remaining grated cheese.
- Bake for 18-20 minutes or until the filling turns golden brown and bubbling. Allow them to rest for 5 minutes and serve!
