This recipe is a tasty and unexpected twist on my many traditional Greek filo appetizers. It goes so well with a glass of chilled white wine, or even on its own. You may wish to make many, as these will disappear fast!
The filling of these crispy treats is a delicious combination of only two ingredients, Asiago cheese and fig jam, which are simply enclosed in layers of buttery filo pastry. These filo triangles can be formed ahead of time and baked when you need them. Summer and fall entertaining doesn’t get any easier than that!
Ingredients for the Asiago Cheese and Fig Jam Filo Triangles
Here is the short list of ingredients for this recipe. As always, the quality of the ingredients is very important and makes all the difference in turning out superior filo triangles:
- Filo Pastry – I used Fillo Factory (#7) in the standard 14″ x 18″ size
- Extra virgin olive oil – for brushing on the filo
- Asiago cheese – or, Gruyère, or your favorite sharp, melting cheese
- Fig jam – which pairs so well with the cheese
- Fresh thyme leaves (optional)
- Sesame seeds (optional)
How to Make the Asiago Cheese and Fig Jam Filo Triangles
- Lay flat two layers of filo, each drizzled with olive oil and cut vertically into six strips. Add cubes of the cheese, a teaspoon of jam, and some fresh thyme (if using) at the end of each strip
2. Start folding each filo strip into a triangle to enclose the filling
3. Continue until you have twelve filo triangles filled and ready to bake
4. Arrange the triangles on top of a parchment-paper-lined baking sheet, brush with some olive oil, and bake until golden brown
Make them ahead of time

They are so perfect to have on hand for entertaining, as once you assemble them, you can arrange the triangles in a single layer on a tray that is lined with parchment paper and store them in the refrigerator. When you need them, brush them with some olive oil and place in the preheated oven. Bake until golden brown.

This recipe is in collaboration with Fillo Factory. You can find this favorite filo dough (of different thicker or thinner varieties) at Whole Foods and several other local stores. I love the quality of the Fillo Factory products and I always make sure to stash a couple of boxes in the freezer!
- 4 sheets of thawed Filo dough (#7 or, Country-style ) - I used Fillo Factory brand
- ¼ cup extra virgin olive oil
- 6 oz. Asiago cheese
- ½ cup good quality fig jam
- Sprigs of fresh thyme leaves (optional)
- Sesame seeds (optional)
- Remove the package of thawed filo dough from the refrigerator about 30 minutes before using it.
- Preheat oven to 375˚ F. Line a baking sheet with parchment paper and set aside.
- Unwrap the filo dough and cover it well with plastic wrap and a kitchen towel while you work.
- Lay one sheet of filo oriented horizontally in front of you on your cutting board. Brush it with olive oil. Place a second sheet of filo on top of the first and brush it with some more olive oil. Run a knife down the filo dough to cut into 6 even strips.
- Add small cubes of the Asiago cheese, a teaspoon of jam, and a few fresh thyme leaves (if using) at the end of each strip.
- Start folding each filo strip into a triangle to enclose the filling.
- Repeat with a second set of two filo sheets, to form 6 more filo triangles.
- Arrange the triangles on top, brush with some olive oil, sprinkle with some sesame seeds, and bake for about 20 minutes or, until golden brown.
- Remove from the oven and allow them to cool slightly before serving.
These are truly delicious, you might want to double the recipe!
