Greek-Style Grilled Chicken with "Smashed" Potatoes

Ingredients
  • 8-10 small red or yellow potatoes
  • 3 TBSP. olive oil
  • -- salt and freshly ground pepper to taste
  • 2-3 TBSP. fresh herbs (rosemary, thyme, oregano) minced
Instructions
  1. Bring a pot of salted water to boil. Add the potatoes and cook them until they are fork-tender but not completely cooked.
  2. Preheat the oven to 450° F.
  3. Line a medium pan with parchment paper or foil. Place the tender potatoes on the baking sheet, leaving plenty of room between each potato.
  4. With a potato masher, gently press down each potato until it slightly mashes, rotate the potato masher 90° and mash again. Brush the tops of each crushed potato generously with olive oil. Sprinkle the potatoes with plenty of salt, freshly ground black pepper and the minced herbs.
  5. Bake for 20-25 minutes, until crispy and golden brown.
  6. Serve hot with a sprinkle of some extra coarse sea salt and another drizzle of your best olive oil.
