Watermelon and Feta Salad

Ingredients
  • 2 lbs. ripe, seedless watermelon, without the rind
  • 1 TBSP. lemon zest
  • 1 TBSP. lemon juice
  • 3 TBSP. best quality olive oil
  • --- pinch of sea salt
  • 3 TBSP. fresh, young mint leaves, minced
  • ¾ cup of Greek Feta cheese, crumbled or cubed
Instructions
  1. Cut the watermelon into cubes and place in a bowl. Zest a lemon set aside the zest. To the bowl with the watermelon add lemon juice, a little of the zest and the olive oil. Toss gently until well combined. Season the salad lightly with salt making sure not to add too much salt because the Feta is salty.
  2. Crumble the Feta cheese over the top of the watermelon. Sprinkle with the remaining lemon zest and serve immediately.
Notes
You can also add sliced cucumber and/or olives to the salad, if you want!
