Roasted Mini Peppers with Garlic and Thyme

An easy vegetarian appetizer that can be a delicious part of snacking board

Ingredients
  • 1 lb. mixed mini peppers
  • ¾ tsp. sea salt
  • ¼ tsp. freshly ground pepper
  • 5 sprigs of fresh thyme
  • 2 garlic cloves, whole and unpeeled
  • 3 TBSP. extra virgin olive oil
  • 2 TBSP. balsamic vinegar
Instructions
  1. Preheat the oven to 450°F.
  2. Wash the peppers and place in a roasting pan that can fit them all in one layer. Season with the salt and pepper and add the fresh thyme and whole garlic. Drizzle the olive oil and the vinegar over the peppers and toss well to combine.
  3. Roast for about 20 minutes or until the peppers are soft and slightly blistered. They will collapse as they roast and become juicy.
  4. Remove from the oven, allow to slightly cool, and remove the skin from the garlic. Toss everything together, taste, and adjust the seasoning.
  5. Serve warm or at room temperature.
Notes
The exact roasting time can be slightly different, and it depends on the oven itself and the roasting pan. Adjust the cooking time as needed.
