Asiago Cheese and Fig Jam Filo Triangles

A delightful and super easy filo appetizer that requires only four ingredients to make!

Ingredients
  • 4 sheets of thawed Filo dough (#7 or, Country-style ) - I used Fillo Factory brand
  • ¼ cup extra virgin olive oil
  • 6 oz. Asiago cheese
  • ½ cup good quality fig jam
  • Sprigs of fresh thyme leaves (optional)
  • Sesame seeds (optional)
Instructions
  1. Remove the package of thawed filo dough from the refrigerator about 30 minutes before using it.
  2. Preheat oven to 375˚ F. Line a baking sheet with parchment paper and set aside.
  3. Unwrap the filo dough and cover it well with plastic wrap and a kitchen towel while you work.
  4. Lay one sheet of filo oriented horizontally in front of you on your cutting board. Brush it with olive oil. Place a second sheet of filo on top of the first and brush it with some more olive oil. Run a knife down the filo dough to cut into 6 even strips.
  5. Add small cubes of the Asiago cheese, a teaspoon of jam, and a few fresh thyme leaves (if using) at the end of each strip.
  6. Start folding each filo strip into a triangle to enclose the filling.
  7. Repeat with a second set of two filo sheets, to form 6 more filo triangles.
  8. Arrange the triangles on top, brush with some olive oil, sprinkle with some sesame seeds, and bake for about 20 minutes or, until golden brown.
  9. Remove from the oven and allow them to cool slightly before serving.
Notes
I often add a few leaves of fresh thyme to the filling, it adds great flavor. If you like sesame seeds, you can lightly sprinkle with white or black sesame seeds, after you brush the top with olive oil.
These are truly delicious, you might want to double the recipe!
