Feta Cheese Flat Bread (alevropita)

Ingredients
  • 1½ cups all purpose flour
  • 1 cup water (or milk)
  • 1 lrg. egg
  • ½ cup plain yogurt
  • ½ tsp. sea salt
  • ¼ tsp. freshly ground pepper
  • 3 TBSP. olive oil for the pan
  • For the topping:
  • 1 cup crumbled Greek Feta
  • 2-3 TBSP. olive oil
Instructions
  1. Preheat the oven to 400° F.
  2. In a large bowl mix together all the ingredients, except for the olive oil.
  3. Place a 13 x 9 baking pan in the hot oven for 5 minutes or until it gets very hot. Carefully remove the hot pan from the oven, pour quickly the olive oil on it and brush it all over the pan. (This will ensure that the cheese bread will not stick to the pan).
  4. Pour the batter evenly onto the hot pan. Sprinkle the feta crumbles evenly across the top, then drizzle with the olive oil. Place the pan in the lowest rack of the oven and bake for about 25-30 minutes, or until the top is golden brown. While baking, poke any air bubbles that might form on the pie with a fork.
  5. Let cool slightly before cutting into squares and serve.
