These words come to my mind every time I visit the farmers’ markets in Greece. The vibrant colors of fresh vegetables in every shade imaginable and the wonderful aromas of just-picked seasonal fruit is a reminder of nature’s abundance waiting to be put into good use. Summer is the perfect time of the year to start cooking without recipes, using ingredients that look the best at the farm-stands and the outdoor markets.
