Fresh Strawberry Granita
Frozen fruit desserts are the perfect end of any summertime meal. This fresh strawberry granita is so satisfying with the flavors of ripe, juicy strawberries slowly melting in your mouth!
No ice cream machine is needed for this granita. All you need is three ingredients to make this refreshing dessert: strawberries, lemon and sugar. The simple lemon syrup is mixed with the ripest strawberries you can find, and then chilled in the refrigerator for several hours.
The markets are still bustling with fresh, small, and extremely aromatic strawberries. Get a couple of pints before they are gone and make this light and delicious dessert for your next BBQ!
- 1 cup hot water
- ¾ cup sugar
- 2 TBSP. fresh lemon juice
- 3 cups organic, ripe strawberries, hulled and sliced
- In a small bowl, make the simple syrup by stirring together the first 3 ingredients, until the sugar dissolves. Let the simple syrup cool.
- Blend the strawberries in a food processor until smooth. Add the cooled syrup to the strawberries and blend again until combined.
- Pour the mixture into 8x4 inch loaf pan. Cover and freeze until it becomes icy around the edges; about half an hour to an hour.
- Using a fork, stir the icy portions into the middle of pan. Freeze again until mixture is frozen, stirring the edges into the center every half hour or so and for about 2 hours. Using a fork, scrape the strawberry granita into flaky crystals.
- Cover tightly and freeze again.
- To serve, scrape some granita into individual bowls. Garnish with additional fresh strawberries and a few mint leaves (optional). Serve at once.
