Friends, the new season of cooking classes at Culinaria Cooking School starts right around the corner in early January. This is an exciting time for all of us at the school as we cannot wait to share the long list of classes we have been planning for 2017 with our students. While classes should go on-line tomorrow, I want to share a sneak preview of my scheduled classes for the Culinaria Winter Season tonight with those of you who are in the greater Washington D.C., Northern Virginia, Maryland area!
Couples Cooking – Northern Italian Cooking
Saturday – 1/21/2017 Participation 7 pm-10 pm
This class is a culinary journey through one of the world’s most exciting and diverse food cultures. With a regional map to guide us, we will discuss the products, cooking techniques and culinary particulars of Italy’s northern regions.
Menu: Crostoni with Fresh Lemon Ricotta and Toasted Hazelnuts, Chicken Fricassee with Porcini Mushrooms and White Wine, Polenta with Fontina and Parmesan Cheeses, Fresh Pear Tart

The Greek Taverna
Saturday – 1/28/2017 Participation 7 pm-10pm
Food is the gateway to understanding the culture and way of life of a country. This class features recipes that are beloved by Greeks and includes foods that you would typically find in any neighborhood taverna. Come spend the evening with Chef Marilena as she shows you around her native country through food!
Menu: Zucchini Fritters with Spicy Feta Cheese Spread, Cumin-Scented Braised Ground Beef Patties (soutzoukakia), Garlic and Potato Spread (skordhalia), Semolina Custard Filo Pie

Couples Cooking – Cooking from the Culinary Heart of Italy
Saturday – 2/4/2017 Participation 7 pm-10 pm
In this class we are taking a trip to the culinary heart of Italy: the region of Emilia Romagna! We will talk about this region’s beautifully handcrafted, local products such as Parmigiano Reggiano cheese, Prosciutto di Parma, and balsamic vinegar from Modena, and then we will create a meal with dishes typical of this region.
Menu: Swiss Chard and Pancetta Tart (erbazzone all’Emiliana), Mixed Green Salad with Modena Balsamic Vinaigrette (insalata mista) , Pasta with the Official Recipe for Ragù from Bologna (ragu alla Bolognese), Chocolate Gelato with Crumbled Almond Cookies (amaretti)

The Italian Bakery
Saturday – 2/25/2017 Participation 9:30 am-12:30 pm
Bakeries are often at the heart of Italian neighborhoods and stopping by one to pick up a loaf of bread is central to the daily routine of most Italians. In this class we will learn how to make two classic breads, one from the North and one from the South and also, a delicious Ciambella, the quintessential breakfast pastry for many Italian households.
Menu: Ciambella Lemon Pastry Ring, Rustic Olive Bread from Puglia, Focaccia with Caramelized Onions, Genovese Style

Couples Cooking – Essential Greek Cuisine
Saturday – 3/11/2017 Participation 7 pm-10 pm
In this class we will learn how to make authentic Greek dishes by mastering some of the most traditional Greek recipes. You won’t need the takeout menu after you learn how to make these classic and mouthwatering delights right at home. Friday – 3/24/2017 Participation 7 pm-10 pm
Great Italian food does not have to be reserved for special occasions. It can easily be enjoyed on a weeknight with these simple-to-execute recipes that are sure to please. Grab a friend or a date and pour a glass of wine, get out the red-checkered tablecloth and get ready for a feast!
Menu: Roasted Balsamic Eggplant with Pecorino Cheese, Succulent Beef Sofrito, Smashed New Potatoes with Parmesan and Fresh Herbs, Apple and Olive Oil Cake
